Easy Peasy Lemon & Parmesan Crusted Salmon

This is actually not really my recipe at all. It’s my mother’s. But I was so impressed with it that I simply had to try it myself. “What recipe did you use?”

I just made it up! I thought to myself hmmm what can I do with this Salmon? – Didn’t I?!” She gestured toward my uncle, sublimely pleased with her efforts.

“Yeah” – he agreed.

“I never really follow a recipe, I just think – what would go nicely with this?” All said with a mildly supressed smile, of course.

But anyhoo, it really was amazing and in a buffet-style dinner, it was the first thing to go. So, I was inspired to try for myself. Now, I couldn’t get in touch with my mom the evening I was preparing to make it, so the result is my own guesswork which worked out just as well. It is only slightly different. My mother likes to use subtle flavours in her cooking, balancing everything so that each ingredient has a chance to express it’s personality at the appropriate moment.

Me, I like to go big or go home.

A hunger games of flavours so to speak. May the best one win!

I’m simply not interested in preparing any meal unless I know it’s going to take me on a journey of the senses (And yes, sometimes that may involve chilli in the eye…)

Ingredients

  • Half side of Salmon
  • 2 Slices of Wholemeal Bread
  • Half a Lemon – Zest and Juice
  • 50g Parmesan Cheese grated
  • 1 clove of Garlic
  • Glug of Olive Oil
  • 1-2 sprigs of fresh Thyme
  • Salt & Pepper to season

Method

Preheat oven at 180°C/350°F/gas 5. Place half side of salmon skin down into a baking dish. Ensure dish is lightly greased with a little olive oil beforehand. In a blender or food processor, place the bread, zest of lemon, juice of lemon, parmesan, garlic, olive oil, thyme and salt & pepper. I sometimes like to use the Nutribullet (although I need to give it a few goes before it blends together fully). Blend ingredients until it resembles a crumb consistency. Place crumb topping evenly over the Salmon and place into oven. Bake for 20-25 minutes.

The result is a fresh, lemoney explosion in your mouth!

Lovely with mashed potatoes or homemade chips and peas. A lovely salad in warmer weather would be perfect. Make it even easier by using oven chips. A definite crowd pleaser, although you may not want to share!
