Movie Night Guacamole

I love Guacamole.

I would eat guacamole every day for the rest of my life willingly without being paid (but will accept payment in avocados for those of you offering!)

My mother would frequently make guacamole and tortilla chips as a snack for my sister and I growing up. So this is a lifetime addiction of mine that has no intention of going away any time soon.

Just ask my husband…

But there is nothing nore comforting and celubrious to me than having a nice bowl of Guac and Nachos while I nestle down into my sofa for a movie night.

This recipe has evolved ever so slightly from my childhood days but remains as addictive and moreish as ever!

And just as a little side note… in addition to being packed full of fibre, omegas, potassium and antioxidants, avocados are rich in stress relieving B vitamins. A great way to unwind after a stressful day.

Avocados for the win!

Ingredients

  • 2 Avocados, ripe
  • 1 Red Chilli pepper chopped
  • 1-2 Cloves of Garlic crushed
  • Half a Lemon
  • 2-4 tablespoons of Greek style natural yoghurt
  • To Serve: your favourite Tortilla Chips (Nachos)

Method

Scoop Avocado into bowl and squeeze over lemon juice (the lemon juice prevents the avocado from browning, but it also gives the guac a lovely fresh flavour). Mash together. Add garlic and chilli and mix until well combined. Finally, stir in desired amount of yoghurt. Start small and add more if needed.

And there you have it! Enjoy with your favourite nachos and a nice glass of wine.
